The wines of Domaine MIA are a sublime alliance of the vision of Mia Subotic, owner of the estate, the cultivation of the vines by Alain Charleux, and the precision work of the estate&#039;s ecosystem of talents.<br \/>\nAmong these speakers, there is one who handles the art of exceptional wine, it is David Duband, our wine expert. Focus on a key figure in the success of our wines.<\/h2>\n<p>&nbsp;<\/p>\n<h3>Winemaking, what are we talking about?<\/h3>\n<p>Once the grapes are harvested, <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Vinification\" target=\"_blank\" rel=\"noopener\">the vinification<\/a>, intervenes to transform the grape into wine.<br \/>\nThe essential stages of winemaking are destemming, pressing, maceration and fermentation.<br \/>\nAll the subtlety of the work of vinification consists mainly in modulating and accompanying the fermentation.<br \/>\n<strong>Les choix du vinificateur sur toutes ces \u00e9tapes donneront \u00e0 chaque cuv\u00e9e son style et son caract\u00e8re<\/strong> en recherchant le meilleur r\u00e9sultat possible.<br \/>\nWinemaking is a delicate operation, the smooth running of which depends on the expertise of the winemaker.<\/p>\n<p>&nbsp;<\/p>\n<h3>David Duband, a recognized expert in winemaking<\/h3>\n<p><strong>David Duband est aujourd\u2019hui consid\u00e9r\u00e9 comme l\u2019un des meilleurs vignerons et vinificateurs de la Bourgogne<\/strong>. Son expertise en fait un homme tr\u00e8s \u00e9cout\u00e9 dans la r\u00e9gion, reconnu \u00e0 la fois par ses pairs et les amateurs de grands vins. Il se veut fid\u00e8le au terroir et \u00e0 la tradition, dans le respect de l\u2019environnement mais ne s\u2019interdit pas de s\u2019affranchir des codes et d\u2019exp\u00e9rimenter.<br \/>\nIl intervient \u00e0 diff\u00e9rents niveaux pour le domaine MIA, <strong>apportant son expertise<\/strong> pour conseiller Mia Subotic, propri\u00e9taire du domaine, mais aussi Alain, notre chef de culture sur des aspects plus techniques, concernant les choix de culture.<br \/>\nIl est \u00e0 l\u2019origine de certains partis-pris forts de Domaine MIA, comme celui de <strong>revenir \u00e0 des vendanges enti\u00e8res<\/strong>. Cette m\u00e9thode ancienne de vinification en vendanges enti\u00e8res est r\u00e9put\u00e9e pour <strong>donner des vins soyeux, a\u00e9riens, et harmonieux<\/strong>.<br \/>\nAnother important choice is that of adding very little sulphites in our wines so as not to distort the aromas and let the fruit express itself.<br \/>\nThese choices are only made possible thanks to the exceptional quality of the grapes harvested. They are the result of the care we take in the vines throughout the year, based on our principles of organic cultivation and oriented towards biodynamics, with respect for nature.<\/p>\n<p><strong><a href=\"https:\/\/domaine-mia.com\/en\/shop\/\">The wines of the estate<\/a> are vinified in our underground cellars in Nuits-Saint-Georges and aged in French oak barrels.<\/strong><\/p>\n<p>&nbsp;<\/p>\n<h3>A shared quality requirement<\/h3>\n<p>A very important step in the making of a wine, however, vinification is part of a journey that goes from culture to tasting.<br \/>\nDiscovering David Duband&#039;s winemaking style was a revelation for Mia, who therefore naturally chose him to vinify our wines, sharing common values, know-how and precision.<br \/>\n<strong>We are happy and proud that David has joined Domaine MIA&#039;s talent ecosystem.<\/strong><\/p>\n<p>&nbsp;<\/p>\n<h3>What does the person think about it?<\/h3>\n<p>\u201cIt was a real challenge for me to vinify other terroirs than the C\u00f4te de Nuits and a great motivation to apply my winemaking method to these other appellations.<br \/>\n40 to 50% of whole harvest brings femininity and complexity to these terroirs with a very mineral base. The punching down on the feet allows a gentle extraction in order to obtain a tannic structure in the finesse.
