How to taste a Grand Vin de Bourgogne

How to taste a Grand Vin de Bourgogne

1. Preparing the wine: essential steps to follow

To enjoy a Grand Vin de Bourgogne under the best conditions, proper preparation is key. These simple steps will help you enhance the aromas and appreciate all its nuances.
Serving temperature
The Grands Vins de Bourgogne shine at precise temperatures, depending on their color and structure. For red wines, an ideal temperature of 16 to 18°C (61-64°F) allows their aromatic complexity to emerge, avoiding the dominance of alcohol. White wines, on the other hand, reveal their freshness and minerality best at 10 to 12°C (50-54°F). Serving white wine too cold can mask its subtle aromas, while a warmer temperature may result in a heavy impression.
Choosing the right glass
The glass you use plays a crucial role in the tasting experience. For great Burgundy winestulip-shaped glasses are particularly recommended. Their slightly narrow neck concentrates the aromas toward the nose, while their moderate opening allows proper aeration. An appropriate glass can transform the tasting, enabling you to better appreciate the delicate nuances of these wines.
The decanter: functional and aesthetic
For red wines, especially younger or more tannic ones, decanting can be highly beneficial. Decanting allows the wine to "breathe," releasing its aromas more quickly. However, older wines are more fragile; decanting should be brief and delicate to preserve their balance.
For white wines, particularly aged ones, light aeration may sometimes be helpful, though it is not essential.

2. The art of pairing Bourgogne wines with food

White Bourgogne wines
With their structure and minerality, white Burgundy wines complement delicate dishes. Seafood or fish in sauce enhances the buttery and toasted aromas of Chardonnay-based whites. Aged Comté or fresh goat cheese also pair wonderfully with a white Burgundy. However, avoid overly acidic or spicy dishes, as they can overshadow the wine's finesse.

3. Tasting a Grand Vin de Bourgogne: Notes by Quentin Loisel

At Domaine MIA, we are fortunate to have our wines tasted by Quentin Loisel, the Head Sommelier of a two-star restaurant in Paris. Passionate about aromas and flavors, he has shared his tasting notes for each of our cuvées, which are available online to guide and inspire your selection of our Grands Vins de Bourgogne.

These tasting notes invite a sensory exploration, helping each individual identify the unique aromas and flavors of each vintage.

More broadly, the recent tasting with Quentin Loisel in our Nuits-Saint-Georges cellars led to a remarkably refined exchange, and his words, when describing the wines of Domaine MIA, fill us with immense pride.

What pride and emotion we feel hearing him speak about our Domaine, where every action we take is reflected in the glass!

These comments make us incredibly proud and motivate us more than ever to continue our efforts.
