AOC stands for Appellation d'Origine Contrôlée. It guarantees the characteristics of a wine, namely :
- • The origin of the terroir (geographical indication)
- • The production method with very precise specifications
- • Local know-how and traditions
- The Mercurey AOC designation was officially recognized in 1936, making it one of the first appellations acknowledged in Burgundy after the establishment of the AOC system in France. This recognition was a crucial step toward standardizing the quality and style of Mercurey wines.
