From a purely oenological point of view, length in the mouth is the duration of the persistence of the aromas.
In fact, the aromas diminish progressively and the sensation of persistence may be reduced according to the wines or the people tasting them...
Nevertheless, oenologists and good wine-lovers are able to quantify that moment when the aromas are still perceptible at a high level, and call it length on the palate.
Length on the palate is also an important characteristic, along with colour and aromas, in qualifying the nature and qualities of a wine. Indeed, a good length on the palate often qualifies a wine of good quality.
