CLOS DES MONTAIGUS, Mercurey Premier Cru is one of the five historical Premier Crus of the Mercurey appellation, established in 1944. The Pinot Noir grapes are hand-harvested from vines planted in 2017. No mechanization is used, and the vineyard follows biodynamic principles.
With a limited production of just 400 bottles from two 228-liter barrels, this exceptional Burgundy wine epitomizes rarity. Each bottle is individually numbered and hand-signed by the owner, Mia Subotic, giving the cuvée a unique personal touch.
LES VASÉES, Mercurey Premier Cru is one of the finest terroirs of Mercurey, in Burgundy. It comes from our parcel of 1.7 hectares with south-east exposure. It takes its name from the curved shape of the soil, the result of water erosion. The soil is marly, deep, not very chalky and full of small pebbles about 5 cm in diameter.
The 40-year-old Pinot Noir vines here mature early, a distinctive characteristic of this area. The resulting wines are typically powerful, with a longer developmental timeline.
CLOS LA MARCHE MONOPOLE, Mercurey is a grand red Burgundy wine from a 3.48-hectare monopole vineyard with southeast exposure. The name derives from the limestone slab, elevated by tectonic movements, on which it lies. The soil is shallow, measuring just 30 cm, and consists of 50 ares of marl-rich terrain on the upper slopes.
The vineyard CLOS LA MARCHE MONOPOLE features 60-year-old Pinot Noir vines across nearly 2 hectares, with the remaining 1.5 hectares replanted more recently. This unique terroir produces wines of remarkable finesse, elegance, and delicacy.
Integral Winemaking for CLOS DES MONTAIGUS, Mercurey Premier Cru. The grapes for "Clos des Montaigus" are hand-harvested and placed as whole clusters, including stems, in a French oak barrel called an "Ouvrée." This unique vinification allows alcoholic and malolactic fermentations to occur within the barrel.
The barrel undergoes manual rotation and occasional stirring for about 15 days. After this phase, the juice and solid components are delicately pressed, and the wine is transferred to a barrel for 13 months of aging.
For CLOS LA MARCHE MONOPOLE & LES VASÉES the 100% Pinot Noir grapes from these parcels are manually harvested and undergo whole-cluster fermentation for 40% of the fruit. The fermentation process, lasting 13 to 14 days, includes 4 to 6 manual punch-downs and some pump-overs. Natural fermentation uses indigenous yeasts from the vineyard's terroir.
Aging takes place in underground cellars for 12 to 13 months in French oak barrels, 25% of which are new, sourced from four complementary coopers.

Our wine CLOS DES MONTAIGUS 1er cru goes perfectly with carpaccio of red tuna or grilled fillet of duck. As an accompaniment to cheese, it goes wonderfully with the traditional Epoisses from our region.
For dessert, it is the perfect accompaniment to a cherry clafoutis.
The 1er cru LES VASÉES will pair well with eggs in meurette or veal sweetbreads. And to avoid choosing between cheese and dessert, it perfectly complements a truffle Brie de Meaux and a Tarte Tatin.
CLOS LA MARCHE MONOPOLE will express all its aromatic character alongside a pâté en croûte, a piece of Charolais beef, or a Cîteaux cheese, and it can beautifully accompany a chocolate fondant.
