• Our Grand Vin de Bourgogne white comes from our 2.5-hectare plot located in the LES ROCHELLES Climat LES ROCHELLES, which enjoys a south-westerly exposure.
100% Chardonnay grape variety, the 1 hectare is planted with 15-year-old vines, while the rest of the plot is planted with vines that are 60 years old or more.
The soil is composed of sandy marl and marl-limestone. The specificity of this Climat of Mercurey lies in the late ripening of its vines. It gives rise to wines that are rather typical in the manner of Chablis.
• Our Mercurey Les CAUDROYES Blanc ("caudroye" meaning "hazel tree" in old French) is the product of a highly calcareous terroir sheltered from the sun, with a north-facing exposure. Despite rising temperatures, it retains remarkable freshness. Its deep soil, filled with large stones from marls, supports 40-year-old vines on average, with 50 ares planted in 2013.
A climat located in a hollow, whose anticipated potential has been fully revealed through hard work, LES PLANTENAYS it enjoys a mixed exposure: one part of the plot is sunlit in the morning, while the other benefits from the evening light. Made from 100% Chardonnay, the vines are of varied ages—30-35 years on 1 hectare, 9 years on 80 ares, and 5 years on 60 ares. They thrive in a stony, marly soil of soft limestone. These late-ripening vines produce vibrant wines with great tension.

Made from 100% Chardonnay, the grapes are hand-harvested. Pressing is done gently, very slowly, and using whole clusters. Fermentation is 100% natural, relying on indigenous yeasts native to our terroirs. The wine is aged in underground cellars for 10 to 12 months, without bâtonnage. Aging takes place in French oak barrels, 25% of which are new, sourced from four complementary coopers. Racking is done by gravity to preserve the wine’s quality.

The 2021 Vintage of LES ROCHELLES received a score of 91/100 from La Revue du Vin de France.
The 2022 vintage of LES CAUDROYES BLANC received a score of 92/100 by DUSSERT GERBER 2025 Guide.
The 2022 vintage of LES PLANTENAYS received a score of 14,5/20 by BOURGOGNE AUJOURD'HUI and the Gold Award by ELLE A TABLE Magazine. It also received a score of 89/100 by DUSSERT GERBER 2025 Guide.

"Crisp nose of orchard fruit, such as forgotten apples and quince. Juicy notes of peaches and white nectarines linked to the spicy framework of white pepper and lime zest.
Smoky, finely chiselled palate, delicate sensation of flavours expressing their purity and fragility, minerality as the centrepiece of a skilfully balanced architecture. Roasted scallops, buckwheat crisps, Dieppoise sauce with caviar and mussels, leek fondue with tarragon"

For our Grand Vin de Bourgogne vintage, LES CAUDROYES (Mercurey)
A full, fleshy nose of white flowers such as acacia and elder flower, a framework of ripe lemons, surrounded by a heady note of encaustic which, combined with the comforting smell of farmhouse bread and raw cream, creates a slender, well-constructed whole.
The palate is more tractable than the nose suggests, fine and taut, with the freshness of the citrus fruit enveloping the powdery chalk and underlining the crunch of the lovage to develop the superb sapidity of this wine.
Rye bread with fromage frais, smoked herring, green coulis like a vinaigrette, julienne of green apple".

For our Grand Vin de Bourgogne LES PLANTENAYS (Rully)
"Powerfully fat and round on the nose, with aromas of roasted wheat, wood, peanut butter, lentils and chickpeas. Rich almond and cashew nut aromas combined with the liveliness of celery.
A rich, generous flavour, the expression of a terroir with strong character, exacerbated by a racy style, with a focus on structure and fatness. The superb length on the palate adds finesse and lightness.
Goat's cheese soufflé, buttered spinach, celery and parsnips, mustard leaf salad."

Notre cuvée iconique, LES ROCHELLES is the perfect accompaniment to lobster with beurre blanc, snail persillade or fresh goat's cheese. It also goes very well with the flavours of a millefeuille cake.
Notre grand vin de Bourgogne bio, Les CAUDROYES Blanc will pair subtly with parsleyed ham or salmon sashimi. An aged goat cheese and an exotic fruit sorbet will beautifully echo the freshness of this cuvée.

These 3 white wines of BOURGOGNE, LES ROCHELLES, LES CAUDROYES BLANC and LES PLANTENAYS can be stored for 2 to 5 years.

The cardboard boxes used to pack our parcels are recyclable and designed to protect against shocks and breakage during transport.
