TERROIR & CLIMAT
Our white wine of Burgundy comes from our 2.5-hectare plot Les Rochelles, which enjoys a south-westerly exposure.
100% Chardonnay grape variety, the 1 hectare is planted with 15-year-old vines, while the rest of the plot is planted with vines that are 60 years old or more.
The soil is composed of sandy marl and marl-limestone.
The specificity of this Climat of Mercurey lies in the late ripening of its vines.
It gives rise to wines that are rather typical in the manner of Chablis.
Our Mercurey Les CAUDROYES Blanc («caudroye» means in Old French «hazelnut») is the result of a very calcareous soil which flourishes sheltered from the sun, since exposed to the north, and enjoys a beautiful freshness despite the rising temperatures.
The deep soil contains large stones derived from marl and supports vines of an average age of 40 years, 50 ares of which were planted in 2013.
A climat located in a hollow, whose anticipated potential has been fully revealed through hard work, Les Plantenays benefits from alternating exposure: one part of the plot basks in the morning sun while the other enjoys it at sunset.
Made from 100% Chardonnay grapes, the vines are a great mix of ages (30-35 year-old vines on 1 hectare, 9 year-old vines on 80 ares and 5 year-old vines on 60 ares), and thrive on stony, marly, soft limestone soil.
They mature late and produce lively wines with good tension. CLOS LA MARCHE MONOPOLE is a red wine from a 3.48 hectare monopole with south-east exposure.
This Climat of Burgundy owes its name to the limestone slab, raised by tectonic plate movements, on which it is situated. The soil, hard and barely 30 centimetres deep, consists of 50 ares of marl, at the top of the Clos.
100% from Pinot Noir grape variety, the vineyard CLOS LA MARCHE MONOPOLE features 60-year-old vines across nearly 2 hectares, with the remaining 1.5 hectares replanted more recently. This unique terroir produces wines of remarkable finesse, elegance, and delicacy.

The 1er Cru Les Vasées est l’un des plus beaux terroirs de Mercurey en Bourgogne. Il provient de notre parcelle de 1,7 ha exposée sud-est. Il tire son nom de la forme courbe en couloir du sol, résultat de l’érosion par l’eau. Celui-ci est marneux, profond, peu calcaire, chargé en petits cailloux d’un diamètre de 5 cm environ.
The vines are around forty years old, 100% Pinot Noir, and reach maturity early, which is typical of the area.
This produces wines that are generally powerful and a little later in their development.
WINEMAKING
ON THE ESTATE
For the Chardonnay grape varieties, the vines are harvested manually. The pressing is done delicately, very slowly and with the whole harvest. The natural 100% fermentation is done using indigenous yeasts, from our terroirs. Aging in underground cellars lasts 12 months, without batonnage. It is produced in French oak barrels, new for 31% of them, selected from 4 additional coopers. Racking is done by gravity to preserve the quality of the wine.
For Pinot Noir grape varieties, the vines are harvested manually, and we use a whole cluster winemaking method (up to 40% of whole bunches). The pressing process lasts between 13 and 14 days, during which takes place between 4 and 6 grape stomping and some remontages. The 100% natural fermentation takes place using indigenous yeasts from our terroirs. Aging, in underground cellars, lasts between 12 and 13 months. It is made in French oak barrels, 25% of which are new, from 4 complementary coopers.

The palate is more tractable than the nose suggests, fine and taut, with the freshness of the citrus fruit enveloping the powdery chalk and underlining the crunch of the lovage to develop the superb sapidity of this wine.

FOOD AND WINE
PAIRINGS
LES ROCHELLES is the perfect accompaniment to lobster with beurre blanc, snail persillade or fresh goat's cheese. It also goes very well with the flavours of a millefeuille cake.
LES CAUDROYES Blanc is a subtle accompaniment to marbled ham or salmon sashimi. Matured goat's cheese and exotic fruit sorbet all of which are enhanced by the freshness of this wine.
CLOS LA MARCHE MONOPOLE will express all its aromatic character alongside a pâté en croûte, a piece of Charolais beef, or a Cîteaux cheese, and it can beautifully accompany a chocolate fondant.
LES CAUDROYES Rouge will magnificently enhance earthy flavours such as a mushroom pie or beef bourguignon.
On the cheese side, a Brillat-Savarin would be the perfect match, and to finish on a sweet, slightly acidic note, a red fruit crumble is just the thing.
The 1er cru LES VASÉES will pair well with eggs in meurette or veal sweetbreads. And to avoid choosing between cheese and dessert, it perfectly complements a truffle Brie de Meaux and a Tarte Tatin.
