Chardonnay cuvée

Our plot of Bourgogne Côte Chalonnaise "Joli Bois" is located in Mercurey on a small plot of 25 ares, facing south-east.
The vines, 100% Chardonnay, are 40 years old on average and thrive on a soil of hard limestone with small rounded siliceous pebbles.

Made from 100% Chardonnay grapes, the vines are harvested by hand. The grapes are pressed gently, very slowly and whole. Fermentation is 100% natural, using indigenous yeasts from our terroirs. The wine is aged in underground cellars for 12 months, without stirring. It is matured in French oak barrels selected from 4 complementary coopers. The wine is racked by gravity to preserve its quality.

This white wine, Bourgogne CHARDONNAY has a lovely yellow colour with green highlights, and a seductive nose reminiscent of vine peach, acacia, blackcurrant buds and lemony notes.
On the palate, the attack is refreshing and clean, with complex aromas underlined by a hint of hawthorn and ripe pear. The balance is underpinned by a beautifully rounded finish.

To fully reveal the expression of a great wine, the choice of tasting glass is essential. A top-quality glass will offer a large surface area for aeration, helping to oxygenate the wine, while its narrower neck will concentrate the aromas for optimum perception of the olfactory nuances and aromatic complexity.
Controlling the serving temperature is also crucial to preserving the integrity of the wine: ideally around 13°C for our CHARDONNAY.
Even the finest cuvées will lose some of their subtlety if these two essential factors - glass and temperature - are not carefully respected.

Our white win, CHARDONNAY is the perfect accompaniment to sunny aperitifs. It will also go wonderfully well with marbled prawns, a summer salad, a semi-dry goat's cheese or a fresh fruit carpaccio.

Our Bourgogne wine CHARDONNAY is best enjoyed young.
