Our wine, Mercurey ‘LES CAUDROYES Rouge’ (‘caudroye’ means ‘hazelnut tree’ in old French), comes from a very chalky terroir that is sheltered from the sun by its northerly exposure, and benefits from a nice coolness despite rising temperatures.
The deep soil contains large stones derived from marl and supports vines of an average age of 40 years, 50 ares of which were planted in 2013.
A 100% Pinot Noir grape variety, the vines are harvested manually, and we use a whole cluster winemaking method (up to 40% of whole bunches) which means that the grape is not separated from its stalk, giving wine a greater structure. The pressing process lasts between 13 and 14 days, during which takes place between 4 and 6 grape stomping and some remontages. The 100% natural fermentation takes place using indigenous yeasts from our terroirs. The aging process takes place in underground cellars and lasts between 12 and 13 months. It is conducted in French oak barrels, 25% of which are new, sourced from 4 complementary coopers.

Round and delicious on the palate, though still in search of balance. The vegetal framework promises fine jewellery bitters, while the delicacy of the rose and raspberry juice refine the structure for a fine balance in the making.

To fully reveal the expression of a great wine, the choice of tasting glass is essential.A top-quality glass will offer a large surface area for aeration, helping to oxygenate the wine, while its narrower neck will concentrate the aromas for optimum perception of the olfactory nuances and aromatic complexity.
Moreover, Controlling the serving temperature is also crucial to preserving the integrity of the wine: ideally around 15°C for pour LES CAUDROYES Rouge.
Even the finest cuvées will lose some of their subtlety if these two essential factors - glass and temperature - are not carefully respected.
LES CAUDROYES Rouge will magnificently enhance earthy flavours such as a mushroom pie or beef bourguignon.
On the cheese side, a Brillat-Savarin would be the perfect match, and to finish on a sweet, slightly acidic note, a red fruit crumble is just the thing.
Aging potential: LES CAUDROYES Rouge can be stored for 5 to 10 years.
