BOURGOGNE WITHOUT ADDED SULFITES

Sazenay is a climat of the Côte Chalonnaise, on which our plot of 1.2 ha is located, facing south-west. Its vines, 100% Pinot Noir, are 50 years old on average and thrive on hard limestone soil with chailles, small rounded siliceous pebbles.

Made from 100% Pinot Noir grapes, the vines are hand-harvested and 40% of the wine is made from whole grapes. Vatting lasts between 13 to 14 days, during which time the cap is punched down 4 to 6 times and the wine is pumped over a few times. Fermentation is 100% natural, using indigenous yeasts from our terroirs. The wine is aged in underground cellars for around 7 months. It is matured in French oak barrels, 25% of them new, from 4 complementary coopers.

Finesse and clarity signify the beautiful tension of this wine which has nothing to hide.

To fully reveal the expression of a great wine, the choice of tasting glass is essential.. A superior quality glass will offer a large aeration surface, promoting the oxygenation of the wine, while its narrow neck will concentrate the aromas to allow optimal perception of olfactory nuances and aromatic complexity.
Moreover, Controlling the serving temperature is also crucial to preserving the integrity of the wine: ideally around 15°C for our BOURGOGNE WITHOUT ADDED SULPHITES.
Even the finest cuvées will lose some of their subtlety if these two essential factors - glass and temperature - are not carefully respected.

Our wine, BOURGOGNE WITHOUT ADDED SULPHITES is perfect with scallops or Bresse poulard, and is ideal with a 24-month-aged Comté cheese or, for sweeter palates, a blueberry tart.

Our BOURGOGNE WITHOUT ADDED SULPHITES wine is best enjoyed young.
