CLOS DES MONTAIGUS has been one of the five historic Premiers Crus of the Mercurey appellation since 1944. Our Pinot Noir grapes come from very young vines planted in 2017. They are worked by hand, excluding any form of mechanisation, and follow biodynamic principles.
The confidential production of 400 bottles, from two 228-litre barrels, reveals the rarity of this exceptional Bourgogne wine. Each bottle bears the unique signature and a number carefully assigned by the hand of the owner, Mia Subotic, giving this vintage a personal imprint.
INTEGRAL VINIFICATION
The grapes are harvested by hand and the whole bunches, berries and stalks are carefully placed in a French oak barrel called ‘l'Ouvrée’. This unique vinification allows the alcoholic and malolactic fermentations to take place within the barrel.
The Ouvrée is rotated daily by hand, with a few stirrings, for a fortnight. At the end of this phase, the juices and solid components are carefully pressed.
The precious liquid is then poured into a barrel dedicated to ageing for 13 months.
A complex, rich nose of ripe red fruit and liquorice, with cherry and walnut adding further depth. Hints of coffee and violet berlingot come through, accompanied by scents of rose and geranium. A nose worthy of a grand cru.
The palate lives up to its promise, its straightforwardness bringing out refined, saline touches. The powdery sensation then takes its place to create poetry for the palate: a fluffy texture and extremely fine tannins that clearly deserve time to find their place.
To fully reveal the expression of a great wine, the choice of tasting glass is essential.A top-quality glass will offer a large surface area for aeration, helping to oxygenate the wine, while its narrower neck will concentrate the aromas for optimum perception of the olfactory nuances and aromatic complexity.
Moreover, Controlling the serving temperature is also crucial to preserving the integrity of the wine: ideally around 15°C for our 1er Cru CLOS DES MONTAIGUS.
Even the finest cuvées will lose some of their subtlety if these two essential factors - glass and temperature - are not carefully respected.
Our wine CLOS DES MONTAIGUS 1er cru goes perfectly with carpaccio of red tuna or grilled fillet of duck. As an accompaniment to cheese, it goes wonderfully with the traditional Epoisses from our region.
For dessert, it is the perfect accompaniment to a cherry clafoutis.
Our 1er Cru CLOS DES MONTAIGUS can be stored for 5 to 10 years.

Our packaging (bottle, label, cardboard) has been designed to be eco-responsible. The label is made from recyclable FSC-certified paper, treated with non-polluting inks (no metal or gilding). The cork stopper comes from a sustainable and the aluminium cap is recyclable.
