Mercurey Les Caudroyes Blanc («caudroye» means in Old French «hazelnut») is the result of a very calcareous soil which flourishes sheltered from the sun, since exposed to the north, and enjoys a beautiful freshness despite the rising temperatures. Its deep soil contains large pebbles from marl and bears vines of 40 years of average age, of which 50 ares were planted in 2013.

WINE FROM ORGANIC FARMING - CERTIFIED BY ECOCERT
From the cold, limestone soil of its terroir, Les Caudroyes blanc borrows its freshness and fine acidity. In a brilliant pale yellow color, it reveals an open bouquet of acacia flowers and exotic fruits on the nose. A beautiful minerality on the palate, underlined by saline accents, gives the whole vivacity and energy. Its finish, supported by notes of white pepper, expresses a good length.
Parsley ham, salmon sashimi and an exotic fruit sorbet will find a beautiful echo in the freshness of this cuvée. It will also subtly accompany a refined goat cheese.

The vines are harvested manually. The pressing is done delicately, very slowly and with the whole harvest. The natural 100% fermentation is done using indigenous yeasts, from our terroirs. Aging in underground cellars lasts 12 months, without batonnage. It is produced in French oak barrels, new for 19% of them, selected from 4 additional coopers. Racking is done by gravity to preserve the quality of the wine.
