Mercurey Les Caudroyes Blanc («caudroye» means in Old French «hazelnut») is the result of a very calcareous soil which flourishes sheltered from the sun, since exposed to the north, and enjoys a beautiful freshness despite the rising temperatures.
The deep soil contains large stones derived from marl and supports vines of an average age of 40 years, 50 ares of which were planted in 2013.
Made from 100% Chardonnay grapes, the vines are harvested by hand. The grapes are pressed gently, very slowly and whole. Fermentation is 100% natural, using indigenous yeasts from our terroirs. The wine is aged in underground cellars for 12 months, without stirring. It is matured in French oak barrels, 25% of them new, from 4 complementary coopers. The wine is racked by gravity to preserve its quality.

A fine minerality on the palate, underlined by saline accents, gives the wine vivacity and energy. The finish, underpinned by notes of white pepper is beautifully long.
A full, fleshy nose of white flowers such as acacia and elder flower, a framework of ripe lemons, surrounded by a heady note of encaustic which, combined with the comforting smell of farmhouse bread and raw cream, creates a slender, well-constructed whole.
The palate is more tractable than the nose suggests, fine and taut, with the freshness of the citrus fruit enveloping the powdery chalk and underlining the crunch of the lovage to develop the superb sapidity of this wine.

Aging potential: our organic white wine LES CAUDROYES Blanc can be stored for 2 to 5 years.
